Easy Weeknight Dinner

I ran across this recipe on Kraft Foods a few years ago and it has been a favorite of mine ever since.  It is so incredibly quick and easy to make which makes it perfect for weeknight dinners when you don't have a lot of time to fuss with complicated recipes.  Serve with a tossed salad and some crusty bread and you're good to go.

Easy Tomato Baked Chicken

Ingredients
1 small red onion, thinly sliced
4 small boneless skinless chicken breast halves (1 lb.)
1 can (14-1/2 oz.) diced tomatoes, drained
1/4 cup KRAFT Light Balsamic Vinaigrette Dressing*
1/4 tsp. garlic powder
1/4 cup KRAFT Grated Parmesan Cheese

*I sometimes substitute with Italian dressing if I don't have balsamic vinaigrette dressing on hand.

Instructions
Heat oven to 425ºF.

Spread onions onto bottom of 13x9-inch baking dish sprayed with cooking spray; top with chicken.

Combine tomatoes, dressing and garlic powder; pour over chicken. Sprinkle with cheese.

Bake 30 min. or until chicken is done (165ºF).

farragio hint:
If you forget to thaw chicken in advance you can boil it in a large pot for 15 minutes before assembling ingredients.
