HOMEMADE PROTEIN BARS

Quick and delicious, these are a much healthier alternative to store-bought bars.
The only unhealthy part is they're so good we can't stop eating them.
Homemade Protein Bars
4 tablespoons butter (salted or unsalted)
16-ounce jar natural peanut butter (creamy or crunchy)
1/3 cup honey
1/4 cup chia seeds
1/4 cup flaxseed
2 teaspoons vanilla extract
2 cups crispy rice cereal
2 cups quick oats
1/2 cup tapioca flour
1/2 cup raisins
1/2 cup chopped walnuts (optional)
1/2 cup chocolate chips (mini or regular size)
In a large sauce pan over low heat, melt all ingredients except for the chocolate chips, for about five minutes, stirring occasionally. When the ingredients have warmed enough to sufficiently mix together, remove pan from heat and let cool for 15 – 20 minutes. After the mixture has cooled, add the chocolate chips*.
Grease a 9” x 13” pan with olive oil and then coat the bottom of pan with sifted cocoa powder. Turn mixture into pan and compress and press to all sides. Refrigerate for at least two hours, and then cut into desired-sized bars. (The bars may be a little crumbly.)
Store in airtight container in refrigerator.
*It is easier to mix and press ingredients by hand. Wearing unpowdered surgical rubber gloves will also help keep ingredients from sticking to hands.
