HOMEMADE PROTEIN BARS

Quick and delicious, these are a much healthier alternative to store-bought bars. The only unhealthy part is they're so good we can't stop eating them!
Homemade Protein Bars
4 Tbs. butter (salted or unsalted)
16 oz. jar natural peanut butter (creamy or crunchy)
1/3 cup honey
¼ cup chia seeds
¼ cup flaxseed
2 tsp. vanilla extract
2 cups crispy rice cereal
2 cups quick oats
1/2 cup raisins
½ cup chopped walnuts (optional)
½ cup chocolate chips (mini or regular size)
Melt butter, peanut butter, and honey in a large saucepan over low heat. Remove pan from heat and let cool for 15 – 20 minutes. Mix remaining ingredients by hand in order listed.
Grease a 9” x 13” pan with olive oil and then coat the bottom of pan with sifted cocoa powder. Turn mixture into pan and compress and press to all sides. Refrigerate for at least two hours, and then cut into desired-sized bars. (The bars may be a little crumbly.)
Store in airtight container in refrigerator.
It is easier to mix and press ingredients by hand. Wearing unpowdered surgical rubber gloves will also help keep ingredients from sticking to hands.
