Homemade Protein Bars

Quick and delicious, these are a much healthier alternative to store-bought bars. The only unhealthy part is they're so good we can't stop eating them!

Homemade Protein Bars

4 tablespoons butter (may use salted or unsalted)
1 1/3 cup + 1/4 cup creamy natural peanut butter
1/4 wheat germ
1/4 cup ground flaxseed
6 tablespoons honey (or 1/4 cup plus 2 Tbsp)
2 teaspoons vanilla extract
3 cups crispy rice cereal
2 cups quick oats
1/2 cup raisins
1/2 cup mini chocolate chips
1/2 cup chopped walnuts

Melt butter in a large saucepan over low heat. Remove pan from heat and stir in all ingredients except for the chocolate chips. Allow mixture to cool.

After mixture has cooled stir in chocolate chips. Turn mixture into 9" x 13" pan and press to all sides. Refrigerate for at least two hours, then cut into desired-sized bars. (The bars will be a little bit crumbly.) Store in airtight container in the refrigerator.
