I've not tried growing zucchini but apparently it grows in abundance. There is even a saying for it... "If you're going to grow zucchini, you'd better have a lot of friends"
Here is a recipe from my mother-in-law that is a great way to use up zucchini. There is something so charming about old recipes handwritten on index cards, and you just know it's going to be something good. My husband and I made this dish for a party recently and it was a hit.

 I ran across this recipe on Kraft Foods a few years ago and it has been a favorite of mine ever since. It is so incredibly quick and easy to make which makes it perfect for weeknight dinners when you don't have a lot of time to fuss with complicated recipes. Serve with a tossed salad and some crusty bread and you're good to go.

Quick, Easy, & Delicious Tortilla Pizza

 When I'm flying solo for dinner and want a quick easy meal for one I turn to this delicious dish. It tastes great and is a much healthier choice than commercial pizzas.
Tortilla Pizza
Ingredients 1 flour tortilla 1/4 to 1/3 cup pizza sauce Chopped veggies of choice (bell peppers, onions, etc.) 8 - 10 slices turkey pepperoni 2 slices Provolone cheese or cheese of choice
Directions Preheat over to 375°F.
Assemble ingredients on tortilla.

Tear Provolone slices in half and assemble on top.

 I prefer making my own pasta sauce and what I love about this sauce is that it can be used for pasta dishes or as a pizza sauce, and it keeps for weeks in the refrigerator so it's a great go-to sauce if you need something in a hurry.
Homemade Pasta & Pizza Sauce

Easy Chicken Vegetable Soup

I keep a large container in the freezer and anytime there are leftover vegetables, macaroni & cheese, or other pastas from dinner I throw them into the container. Over time when I've saved up enough leftovers I make soup.
I love soup. It's a great meal in both winter and summer. It makes a cold wintery day just a little bit nicer, and in the summer it's a good way to make a meal without having to turn on the oven.

Unusually Good Low-Fat Spice Cake

 I told you about Unusually Good Low-Fat Brownies, and now is this unusual way to make low-fat spice cake.
Ingredients 1 (15 oz.) can pumpkin 1 (18.25 oz.) box spice cake mix
Directions Add the pumpkin, and nothing else, to the spice cake mix. ONLY add the pumpkin to the spice cake mix; do not add anything else the mix calls for. Mix together until fully blended and bake as instructed.

This is a super easy recipe I found a few years ago on meals.com. I love it because it's a great recipe to play around with and add other vegetables I need to use up, such as mushroom, squash, etc. I also like it because I can use whatever pasta I might have on hand.

 When I'm not in the mood to make a traditional tossed salad with all the fixings I'll make this instead. It's quick and easy and still packs a lot of flavor.
Slice a cucumber about 1/4" thick. I usually cut enough so there are four or five slices per person.  A friend told me of an unusual way to make low-fat brownies that are actually quite good.
Ingredients: 1 (20 oz.) box brownie mix 1 (15 oz.) can black beans
Directions: Puree the can of black beans in a blender and add to brownie mix. ONLY use the black beans with the brownie mix; do not add the oil, eggs, and water that the mix calls for. Just use the pureed beans. Bake as instructed.

 Early in my marriage I knew I'd need a lot of help in the cooking department and came across a great booklet at the grocery checkout called Lawry's Weekday Gourmet. Over the years the booklet fell apart but I made sure to save this family favorite.
When I'm choosing a recipe I have two major criteria; it has to be very flavorful, and not have a lot of fussy ingredients. This one definitely fits the bill.

My son doesn't like bananas, but he loves my banana nut bread it's that good. The best time to make it is when you have bananas that are past their prime. They're softer and easier to work into the batter. The following recipe is for one loaf but as you'll see in some of the pictures I doubled it and made two.

No-Bake Chocolate Peanut Butter Cookies
Ingredients: 2 cups white sugar 1/2 cup milk 1/4 cup butter 2 tablespoons unsweetened cocoa powder 3 cups quick cooking oats 1/2 cup peanut butter 1 teaspoon vanilla extract 1 cup chopped walnuts (optional)
